The new things I have learnt about Japan is they use to do fermented fish and it has healthy bacteria they way you make it is u need fish and rice then for 2 years you leave it and the relaxed it with fresh rice and it is ready to be eaten. I have also learnt the more money you pay the better it will taste. It takes years to train and it is not an essay job to do.
